Valentine’s Day Cake Pops

Happy Friday everyone! With Valentine’s Day around the corner I had to share photos of my latest project (and upcoming obsession). As you know, I have an incurable sweet tooth and can never have too many sweets on hand. :) These cake pops were made with the help of my friends Megan and Joyce. Megan was already an expert on the delicate process of making cake pops so she guided us through this recipe.

Note to those interested in trying this at home: don’t make cake pops by yourself. Maybe it wouldn’t be so bad if you were making a handful, but we decided to make 75 pops and it took us a total of FIVE hours!!

We used red, pink, and white candy melts to coat the pops. You can find these at craft stores like Michael’s or JoAnn’s. When I took the pops out of the freezer to photograph, they started to sweat! They look much smoother right after drying. These photos were taken the day after we made them.

Guess whose bite marks those are. Haha. Best part of photographing food – I get to eat them! :P We used two flavors of cake mixes: red velvet and devil’s food cake (pictured above).

To store and display cake pops upright, make sure to have a few blocks of styrofoam handy! Another option is to display them face down, with the lollipop sticks pointing upward. Both ways look nice but drying them upright preserves their perfectly round shape.

I am very sorry to report that I failed to document the steps from beginning to end. In the beginning I was too excited to take photos… and by the time we were dipping and decorating, the sun had gone down and lighting was less than ideal. Next time, I promise! These cake balls are rolled by hand and made of crumbled cake mixed with frosting. They are not actually baked into balls, so the consistency is more dense and fudge-like than normal cake. For detailed instructions, check out bakerella’s recipe. She is a very accomplished blogger (and now published author) credited for making cake pops as popular as they are today.

Coming up next… lots of weddings and engagements! To my surprise I’ve had shoots nearly every weekend this winter, despite the fact that it’s off season for the wedding industry. No complaints here. SOMEDAY I’ll catch up on all my editing… and throw a party to celebrate. Because I love decorating and need an excuse to make more cake pops. ;)
